  • 12 oysters bijvoorbeeld fines
  • 2 el soy sauce
  • 1 el ginger syrup
  • 1 clove garlic
  • 1/2 red pepper
  • 1/2 bunch cilantro
  • 1 el lemon juice


  • Finely chop the garlic, pepper and cilantro
  • Poke the oysters open and loose, pouring off most of the liquid
  • Put them in a mortar and pound until you have a coarse paste
  • While mashing, add the ginger syrup, lemon juice and soy sauce
  • Make sure all the flavors are well incorporated into each other
  • Strain the mixture if necessary before dividing it among the oysters
