Leave to cool completely and then move to the fridge. Leave it to fully set.<\/div><\/li><li id=\"wprm-recipe-3778-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">When the mixture has fully set, blend it smooth in a blender. This is done to remove any granules, resulting in a smooth and glossy gel.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Smoked vinaigrette<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-3778-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Finely chop the shallot.<\/div><\/li><li id=\"wprm-recipe-3778-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Mix the raspberry vinegar and olive oil. Add the shallot. Remove it from the shell. Place it on a platter. Carefully torch it with a gas burner. Be careful not to make them too dark<\/div><\/li><li id=\"wprm-recipe-3778-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">After torching, place them on a piece of kitchen paper to drain a bit.<\/div><\/li><li id=\"wprm-recipe-3778-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Now, place the oysters on a plate. I have gone with 4 per person. Be creative with the presentation<\/div><\/li><li id=\"wprm-recipe-3778-step-2-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Place little dots of the kiwi gel here and there. Add the vinaigrette with plenty of shallots.<\/span><\/div><\/li><li id=\"wprm-recipe-3778-step-2-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Grate raw cauliflower over the entire dish. Finish the dish with microgreens and edible flowers. Also, add fresh kiwi in small cubes.
