Chinese periwinkles
These whelks are stir-fried in black bean and garlic sauce, making them a delicious snack or appetizer.

Ingredients

periwinkles

tbsp
vegetable oil
such as peanut oil

tsp
fresh ginger
finely chopped
3
cloves
garlic
finely chopped
1
onion
sliced
2
tbsp
black bean and garlic sauce
4
tbsp
Shaoxing wine or dry sherry
1
tbsp
soy sauce
white pepper
Instructions
Heat the oil in a pan and add the ginger.
After half a minute, add the onion and garlic.
After another half a minute, add the black bean sauce.
Stir-fry everything briefly, then add the rice wine.
Turn the heat to high until the pan is very hot.
Add the periwinkles and soy sauce, then cover the pan with a lid.
Steam until the periwinkles are fully cooked, then finish with white pepper.
