Ingredients

hollow oysters
for example Irish Supreme
1
avocado

tbsp
mayonaise
1
lemon
squeezed
2
sprigs
basil
fried onions
Instructions
Mix the avocado, basil, lemon zest and mayonaise into a smooth cream
Add a pinch of salt and pepper to taste if desired.
Shuck the oysters and pour out some water if needed.
Divide the cream over the oysters and finish with a couple of fried onions
