Aguachile with oyster
Aguachile resembles tiger's milk but is slightly different. The concept is similar, with the fish cooking in the aguachile. To avoid overpowering the dish, we used less aguachile. The oyster remains uncooked and is eaten raw!
Ingredients
- 12 hollow oysters for example Sol de Zélande
For the aguachile marinade
- 3 limes juice and zest
- 1 clove garlic
- 1 bunch coriander
- 2 jalapenos
Instructions
- Put all the ingredients for the aguachile marinade in a blender and blend until you have a smooth, green sauce.
- Shuck the oysters
- Pour some of the marinade in the oyster
