Lobsters and crabs are not farmed. They live in natural conditions. Crabs are mainly found along rocky coasts, up to 100 meters deep. They can grow up to 25 cm long and weigh up to 4.5 kilos. During the fishing season, they are caught with traps or trawls. Lobsters also prefer a rocky substrate. Lobster fishing takes place with so-called lobster pots.
After being caught, the lobsters and crabs are brought to Krijn Verwijs, where they are placed in a special basin with purified Oosterschelde water. Here, we mimic natural conditions to keep them at their peak. The lobsters and crabs remain in this 'wet warehouse' until they are shipped.
The Canadian lobster, also known as Homarus americanus, has a black color, a delicious taste, and a somewhat softer texture. The Canadian lobster is caught in the cool waters off the east coast of Canada. Because the area is very large, there is always a part where the peak season for lobster fishing is occurring. This way, we guarantee fresh lobsters throughout the year. We also sell the Canadian lobster cooked.
The European lobster, often known as the "Blue Lobster" due to its bluish shell. The European lobster has a firmer texture and a more refined taste. We source European lobsters from Wales and Scandinavia. Since the seasons in these regions vary, we can supply European lobster throughout the entire year.
The Oosterschelde lobster is a rare product that is only available for a short period each year. The Oosterschelde lobster season officially begins on the last Thursday of March and lasts until July 15.
North Sea crabs come from the Wadden Sea, England, and Ireland. They can be found at depths of up to 300 meters. These crabs primarily live on rocks, stones, and wrecks. They mainly prey on other shellfish and mollusks. The North Sea crab is well-known for its delicious sweet claw meat.
