Chinese periwinkles

These whelks are stir-fried in black bean and garlic sauce, making them a delicious snack or appetizer.

Ingredients
  

  • 1 kg periwinkles
  • 2 tbsp vegetable oil such as peanut oil
  • 2 tsp fresh ginger finely chopped
  • 3 cloves garlic finely chopped
  • 1 onion sliced
  • 2 tbsp black bean and garlic sauce
  • 4 tbsp Shaoxing wine or dry sherry
  • 1 tbsp soy sauce
  • white pepper

Instructions
 

  • Heat the oil in a pan and add the ginger.
  • After half a minute, add the onion and garlic.
  • After another half a minute, add the black bean sauce.
  • Stir-fry everything briefly, then add the rice wine.
  • Turn the heat to high until the pan is very hot.
  • Add the periwinkles and soy sauce, then cover the pan with a lid.
  • Steam until the periwinkles are fully cooked, then finish with white pepper.
