Kees believes that you should start at a young age when you start growing mussels. “You really have to learn how to work with Mother Nature,” says Kees. He is the 5th generation of the Van Damme family who grow their mussels in the Oosterschelde.
Vincent Bol
Vincent is the 5th generation within his family's breeders. The breeders' gene is in his blood, resulting in superb products. Vincent's oysters are harvested from the bottom of the Oosterschelde and Grevelingen waters.

The Buitjes, Rispens, van Straten and Bolt families have a long history in shrimp fishing. They dream of leaving a legacy for their children-and grandchildren-in which they, too, can continue to harvest from a fertile sea in a sustainable way and develop tasty foods from one passion.

In Poulnasherry Bay, the strong currents and twice daily tidal up-welling of the Atlantic Ocean create an ideal environment for oyster cultivation, ensuring their health and quality. The bay's water, enriched by the River Shannon's algae and phytoplankton, along with minerals from the bay itself, contributes to the exceptional conditions. Thomas Galvin, recognizing oysters' sensitivity. Galvin highlights the need for regular nurturing, a commitment that requires working with the tides, demanding both time and patience day and night. This approch results in the most beautifull oysters that we call: SUPREME.
