Chinese periwinkles
These whelks are stir-fried in black bean and garlic sauce, making them a delicious snack or appetizer.

Ingredients
- 1 kg periwinkles
- 2 tbsp vegetable oil such as peanut oil
- 2 tsp fresh ginger finely chopped
- 3 cloves garlic finely chopped
- 1 onion sliced
- 2 tbsp black bean and garlic sauce
- 4 tbsp Shaoxing wine or dry sherry
- 1 tbsp soy sauce
- white pepper
Instructions
- Heat the oil in a pan and add the ginger.
- After half a minute, add the onion and garlic.
- After another half a minute, add the black bean sauce.
- Stir-fry everything briefly, then add the rice wine.
- Turn the heat to high until the pan is very hot.
- Add the periwinkles and soy sauce, then cover the pan with a lid.
- Steam until the periwinkles are fully cooked, then finish with white pepper.
