Mussels in spicy garlic oil

  • 2 kg mussels
  • 1 glass dry white wine
  • 60 ml olive oil
  • 4 cloves garlic chopped
  • 3 chipotle peppers in adobo sauce chopped
  • 1 tl sea salt
  • 1 sourdough bread


  • Put the garlic, chipotle pepper and oil in a wok pan over high heat
  • Heat this mixture until the garlic is browned
  • Strain it and keep the oil in a separate container
  • Add the mussels to the hot wok and pour in the glass of white wine
  • Stir frequently until all shells are open
  • Pour the oil on top
  • Divide mussels among plates or place in a bowl
  • Pour the oil/wine mixture left in the pan over the mussels
  • Finish with some coarse sea salt


Make sure you have a nice loaf of bread to dip with!
