Oysters with avocado and basil
The soft avocado cream brightens the briny oyster!

Ingredients
- 12 hollow oysters for example Irish Supreme
 - 1 avocado
 - 4 tbsp mayonaise
 - 1 lemon squeezed
 - 2 sprigs basil
 - fried onions
 
Instructions
- Mix the avocado, basil, lemon zest and mayonaise into a smooth cream
 - Add a pinch of salt and pepper to taste if desired.
 - Shuck the oysters and pour out some water if needed.
 - Divide the cream over the oysters and finish with a couple of fried onions
