Oysters with avocado and basil

The soft avocado cream brightens the briny oyster!

Ingredients
  

  • 12 hollow oysters for example Irish Supreme
  • 1 avocado
  • 4 table spoons mayonaise
  • 1 lemon squeezed
  • 2 branches basil
  • fried onions

Instructions
 

  • Mix the avocado, basil, lemon zest and mayonaise into a smooth cream
  • Add a pinch of salt and pepper to taste if desired.
  • Shuck the oysters and pour out some water if needed.
  • Divide the cream over the oysters and finish with a couple of fried onions
